Program and dishes for the day

Temakizushi, also known as hand roll sushi, is a casual and fun way to enjoy sushi. It consists of a sheet of nori (seaweed) wrapped around sushi rice and various fillings like raw fish, vegetables, or egg, forming a cone shape that is easy to hold and eat. It's often enjoyed at home or at parties, where everyone can make their own rolls. We prefer to make it with a single sheet of nori, folded more simply—like a taco or a small wrap—making it easier to prepare and enjoy.

In this workshop, we’ll dive into the art of making temakizushi – hand-rolled sushi. You’ll learn how to prepare all the essential elements from scratch and how to assemble your own temaki with fresh 

toppings. Along the way, we’ll demonstrate key techniques and tips you can easily use at home.


Shari (sushi rice):
We’ll show you how to cook perfect sushi rice and mix it properly to get the right texture and balance. This is the base of every good sushi roll.


Awase-su (sushi vinegar blend):
You’ll learn how to make the classic vinegar mix that’s combined with the rice – a delicate balance of sweetness, acidity, and umami.


Tare (sauce):
We’ll prepare a rich tare sauce from scratch, perfect as a finishing touch for fish or vegetables in your temaki.


Homemade Gari (pickled ginger):
We’ll teach you how to make your own pickled ginger at home – fresh, tangy, and much milder than the store-bought version.


Cutting fish for temaki:
We’ll guide you through how to cut sashimi-grade fish safely and beautifully, ready for hand rolls.


Assorted fresh vegetable toppings:
We’ll explore a range of fresh, seasonal vegetables and how to slice and prepare them to complement your temaki rolls.

Minor variations in the dishes and programme may occur due to availability of ingredients from our suppliers and to offer the best possible experience on the day.
